Spicy Salmon with Cannelloni Beans
Ingredients (Serves 4)
400g salmon fillets
3 tbsp harissa paste
2 x 400g cans cannelloni beans, rinsed
1/2 red onion, finely sliced
2 lemons (1 sliced, 1 juiced)
1 red pointed pepper, deseeded and sliced into rings
2 cloves garlic, crushed
100 ml white wine
4 sprigs oregano
1 tbsp olive oil
salt & pepper
Method
Preheat the oven to 180 degrees. Combine the cannelloni beans, red pepper, white wine, garlic, oregano, red onion, lemon juice and half of the lemon slices in a baking dish. Season with salt and pepper to taste. Place in the oven and bake for 15 minutes.
Meanwhile season the salmon fillets with salt and brush with harissa paste on both sides. Remove the baking dish from the oven, place the salmon onto the bean mix and drizzle with olive oil. Transfer back into the oven and bake the salmon for 15 - 20 minutes.
Once the salmon is cooked to your liking, serve with the remaining lemon slices and some leafy green vegetables to complete the dish.
